Its simple, yet effective and the best part is that you know exactly what is inside of it!
* 4 Pounds of organic roma tomatos
* 4 Cloves of garlic
* 1 bunch of fresh Basil leaves
* 1 1/2 punnet of fresh mushrooms
* Handful of dried oregano
* 2 large brown onions
* a splash of local pinot noir
* Lemon juice

6. Any type of jar
The Jar kit which included 2,4 & 5 was ($12.99) at Walmart, the Jars were Mason Jars for a 12 pack ($7.99) also from walmart.
Step 1: Rinse Jars and lids in hot soapy water, to sterilize the glass jars, use a pot of boiling water and place the jars inside for 10 minutes.
Step 2: While the jars are steralizing, cut tomatos in half with the core removed and place into oven at 350 degrees on a baking tray, cook for 15 minutes, until soft and the skins are started to peel off.
Step 3: In a large saucepan sautee the garlic and onion until lightly golden. Gently remove the skins off the tomatos and add into the saucepan including any juices left over. Add basil, oregano, mushrooms, the wine and season with salt & pepper. Leave it to simmer on low for 1 hour or until tomatos are soft and blended into a paste.
Step 4: Remove the jars using with the tongs from the boiling water, place onto the table and put 1 tablespoon of lemon juice into every jar. Then fill the jars with sauce using the funnel, making sure to leave 1 inch from the top of the jar.
Step 5: Use a tool to make sure there are no air bubbles in the jar. Then use the Magnetic tool, lift the lid out of the boiling water and place ontop of every jar along with the screw top.
Step 6: Place every jar back into the boiling water, this will seal the jars tight, leave for 35 minutes. After the time is up, use your jar tongs to careful remove the jars from the boiling water and place onto a tea towel. There you go, your very own fresh tomato sauce put into a jar.
